Costate di Manzo alle Erbe Aromatiche

3 tomatoes, peeled and seeded
1 sprig marjoram
90 ml olive oil
salt and freshly grounded white pepper
1 T-bone steak about 1,5 kg
1 sprig savory, minced
In a blender, combine the tomatoes with half the marjoram and 2 tblsp of olive oil. add salt and pepper tot taste and blend until smooth.
heat the remaining olive oil in a large skillet. when its hot, add the steak and cook for 10 minutes on each side. When turning the meat, sprinkle it with the savory and the remaining marjoram and season with   salt and pepper. the stake should be rare. Thinly slice it. Spread some of the sauce over the bottom of each heated plate, top with slices of steak and serve. Slivers of fresh boletus mushrooms make a good accompaniment.
