 | 1 kg strawberries hulled |
 | 600 ml water |
 | 175 granulated sugar |
 | pared rind and juice of 2 lemons |
 | 3 handfuls of elderflower |

Put the water, sugar and
lemon rind into a saucepan and let the sugar dissolve in the water over a gentle heat.
then boil fast for 5 minutes. Draw the pan off the heat an add the lemon juice and
elderflower. allow the syrup to cool completely and then strain it through a sieve. Put
the strawberries in a serving bowl and pour the syrup over them. Leave several hours
before serving |
