Strawberries in elderflower syrup

1 kg strawberries hulled
600 ml water
175 granulated sugar
pared rind and juice of 2 lemons
3 handfuls of elderflower
Put the water, sugar and lemon rind into a saucepan and let the sugar dissolve in the water over a gentle heat. then boil fast for 5 minutes. Draw the pan off the heat an add the lemon juice and elderflower. allow the syrup to cool completely and then strain it through a sieve. Put the strawberries in a serving bowl and pour the syrup over them. Leave several hours before serving
