Thai Laksa

Ingredients:
1kg cooked laksa noodles       1/2kg beansprouts
polygonum, chopped finely       3 cucumbers, sliced finely
1/2kg beef boiled for 30mins   3 cups coconut milk
1 can bamboo shoots               chili padi
6 cloves garlic (blend with chili padi)
basil                                         4 pieces mackerel, boil and                                                  remove flesh
2 pieces lemongrass, crushed   250g prawn meat, minced
1 cup oil                                   salt to taste
limes and belachan to garnish
Preparation:

Heat oil in pot, stir-fry onions and chili padi, then add in 2cups coconut milk, beef, fish meat and minced prawns, and bring to boil. Add in 1 cup coconut milk, bamboo shoots, basil, lemongrass and salt. Boil till gravy thickens. Place laksa noodles in serving bowls, together with cucumber, polygonum and beansprouts, pour gravy and garnish with limes and blachan.
